After being diagnosed with both Hashimoto’s and celiac disease in her twenties, Mickey turned to AIP to address her symptoms and reclaim her energy. That experience shaped her professional path, inspiring her to blend nutritional science, practical culinary skills, and lived experience to make healing approachable and sustainable.
As one of the original pioneers of the AIP movement, Mickey has spent over twelve years teaching, speaking, and collaborating with practitioners, researchers, and patient communities across the globe. Her work bridges the gap between evidence-based nutrition and real-life application, helping people transform AIP from a set of rules into a livable, nourishing lifestyle.
